And it's fascinating to get a bit of insight into the bodges and fixes that chefs use: we saw a scrambled custard rescued with white chocolate and soft cheese, and an over-sweetened custard redeemed and elevated with a squeeze of lemon juice. And I was particularly glad to see that top-of-the-range kitchen equipment are plagued by the same glitches that affect my own gear.
